Making this classic ingredient at home became very popular several years ago when a vanilla bean shortage shot prices way up in stores. People soon discovered that making vanilla extract produces a fresher and better tasting product, while also giving a huge amount of creative liberty.

You can use an alcohol of your choice, just make sure it’s above 80 proof to guarantee the best extraction. Many people use vodka or grain alcohol (Everclear), but bourbon, rum, and brandy are all exciting alternatives.

Our recipe revolutionizes the experience by taking the usual long extraction time (up to a year) and reducing it to just a few weeks! Through pressurizing a siphon with XLWhip™ brand’s quality nitrous oxide gas, we can speed up the process greatly and you’ll be on your way cooking and baking delicious goodies almost before you know it.

Potato Vodka (or other 80+ Proof alcohol of choice)

Preparation:

  1.  Take 5 vanilla beans, cut them in half and then slice along the pod to expose the beans. TIP: Although this is all that’s necessary, you can also scrape the seeds out with a spoon or knife to expose more vanilla for the extraction process.
  2. Place the pods, beans and alcohol into the whipping siphon (whip cream dispenser).
  3. Close the lid, insert 8 grams of nitrous oxide, shake, let sit for 5 minutes, add another 8 grams, shake again and place in the refrigerator for 14 days.
  4. After 14 days, remove the siphon from the fridge. Place the dispenser upright and place a glass over the spout to catch any overflow that may come out when emptying. Carefully empty the gas from the dispenser by slowly squeezing it out. Some liquid may come out, make sure to position the glass so it can catch any overflow. Once the dispenser is empty of gas, unscrew the cap and strain the contents into a measuring cup.
  5. Place the liquid into a container. Then put any strained pods and seeds into the container as desired. Left-over parts of the bean can be saved to make into vanilla sugar for future baking projects.
  6. For long term storage, make sure to keep the extract out of direct sunlight by keeping it in either a dark glass bottle or cupboard to extend its potency.
