This recipe is made for a one pint dispenser.

This classically light drink was created around 100 years ago in Italy. There are many stories regarding its origin and several regions proudly claim to be its home, but no one can be sure. One thing almost everyone will agree is that limoncello is a wonderful, sweet, and zesty addition to anyone’s recipe book.

While normal lemon extraction needs two to six weeks to prepare depending on desired strength of lemon flavor, we have cut that time to under an hour by adding XLWhip quality nitrous oxide under pressure.

This recipe can be easily adapted to your personal taste by increasing the time in the fridge for more lemon taste and by increasing the sugar for added sweetness. Many believe this drink is best served over ice.

Preparation:

  1. Wash the lemons.
  2. Zest all lemons, avoiding as much white pith as possible as it will add a bitter flavor. (We won’t be using the rest of the lemons in this recipe. You can set them aside if you have another immediate use planned, or you can juice and freeze the lemon juice in an ice cube tray for easy portions later.)
  3. Place all zest in the dispenser with the vodka.
  4. Close the lid, insert 8 grams of nitrous oxide, shake, let sit for 5 min, add another 8 grams of nitrous oxide, shake again and place in the refrigerator for 15 minutes.
  5. Add water and sugars together in a pan over mild heat and stir until the honey and sugar dissolve completely, then remove from heat and allow to cool.
  6. Remove the dispenser from the refrigerator. Place the dispenser upright and place a glass over the spout to catch any overflow that may come out when emptying. Carefully empty the gas from the dispenser by slowly squeezing it out. TIP: Some liquid may come out, make sure to position a glass so it can catch any overflow. Once the dispenser is empty of gas, unscrew the cap and strain the liquid into a container.
  7. Add the honey, sugar and water mixture.
  8. Serve over a glass full of ice. You can dilute it with water if the drink is too strong.
