This recipe is made for a ½ pint dispenser.

This basic organic whipped cream is a wonderful addition to everything it touches. It is often one of the first recipes aspiring molecular gastronomists make to get familiar with the culinary siphon (whipped cream dispenser). Because it is so easy to make and works with so many recipes, you can experiment by adding more or less honey and vanilla to taste. The key to the best whipped cream is high-quality nitrous oxide, and XLWhip™ has the best to offer.

Ingredients

Heavy Cream

Vanilla Extract (homemade is best)

Preparation:

  1. TIP: Placing your siphon in the refrigerator at least an hour before starting will help create a firmer set to your whipped cream.
  2. Mix all ingredients together in a bowl gently, then pour them into the pre-chilled whipping siphon. Before disposing of the container, take note of the “best by” date on the heavy cream packaging for later.
  3. Insert 8 grams of nitrous oxide into the siphon and shake the siphon 5–10 times.  Over-shaking the siphon can create an undesirably thick whipped cream. Thicker cream can is harder to propel and can be much messier.
  4. Refrigerate for at least 15 minutes.
  5. Shake siphon three times, turn over and shake once firmly downward, moving the contents toward the top, and serve using your preferred siphon tip. You can place the siphon back into the fridge for later use up to the cream’s “best by” date.
